Quesadillas




Ingredients

2 tortillas per person

¼  can refried beans

½  cup grated cheese

¼   cup grated carrot

¼   cup corn kernels






Instructions

  1. Grate cheese and carrot.


  1. Lay a tortilla on a board and spread with refried beans.


  1. Sprinkle grated cheese, grated carrot and corn over the beans.


  1. Place a tortilla on top.


  1. Heat a frying pan over a low to medium heat without any oil.


  1. Place filled tortillas in the frying pan and cook slowly, turn over after approximately 3-4 minutes, until both sides are a golden brown. Remove from the pan.


  1. Slice in half and serve hot.
