Chicken Enchiladas

 Ingredients


200g cooked chicken

1 tbsp sour cream

½ cup mushrooms

½ can chopped tomatoes

3 tortilla wraps

30g cheese, grated





Method


  1. Preheat the oven to 200℃.

  2. Cut up the chicken into small pieces and stir fry in a pan on a medium high heat.

  3. Add the sour cream, mushrooms and half the tomatoes.

  4. Divide the mixture up between the tortillas and roll up to enclose the filling.

  5. Place the tortillas seam-side down in an oven proof dish.

  6. Spoon the remaining tomato over the tortillas and and sprinkle with grated cheese.

  7. Bake for 15-20 minutes or until the cheese turns golden.
