Anything Muffins


Ingredients (12 muffins)

¾ cup of oil

2 eggs

¾ cup milk

2 cups flour

2tsp baking powder

1 cup of sugar

¼ cup custard powder



Method 

  1. Preheat oven to 190℃

  2. Beat the oil, milk, and eggs together in a large bowl.

  3. Add flour, baking powder, sugar and custard powder. DO NOT MIX YET!!!

  4. Add fruit and/or chocolate chips.

  5. Fold ingredients together, making sure not to over mix.

  6. ¾ fill greased muffin pans

  7. Bake for 15 - 20 mins



Variations:

2 mashed bananas and ¼ cup of chocolate chips.

1 cup frozen blueberries

1 tin (drained) diced peaches and ½ cup of white chocolate buttons

1 cup of dried fruit like apricots, raisins etc.
