Vege-up macaroni cheese


Ingredients (serves 3)

1/2 cup macaroni

1/2 cup cauli and broccoli florets

1 Tbsp oil

1/4 onion

1 tbsp flour

3/4 cups milk

1/2 cups (70g) grated cheese

¼ cup breadcrumbs






Method

  1. Fill a large pot with 2 cups of water and bring to the boil. Add macaroni and simmer for 7 minutes. Add cauliflower and broccoli to macaroni, simmer for 3-4 minutes, then drain.


  1. One person to chop up onion and one person to grate cheese.


  1. To make the cheese sauce: heat oil in another smaller pot, add onion and stir fry for 3-4 minutes.


  1. Add flour, mix well and gradually add milk. Heat gently, stirring until thickened. Add cheese - save some cheese to sprinkle on the top.


  1. Preheat the oven to 200 ℃ on ‘grill’  function. Place macaroni vegetable mixture in a baking dish. Pour over cheese sauce, stir through gently, sprinkle with breadcrumbs and leftover cheese.


  1. Place under the preheated grill for 5-10 minutes or until golden brown.


  1. Remove from the oven and spoon onto plates.
